Tuesday Tips...

 
 
We're excited to announce the start of a new segment here on the blog today... TUESDAY TIPS! Each week a Beachwalk Press author will pop in and leave a tip for you. It can be on any topic... writing, cleaning, cooking, time management.  
 
We're all busy these days. I'm a full-time mom, writer and I substitute teach 2-3 days a week at an elementary school. My husband travels a lot. Some months he's gone three of the four weeks. Things can get hectic around my house with all of the running from sports to PTO meetings to school functions. Then there's that little window when they get home from school and before they have to get to track or baseball practice that we like to call dinner.
 
My Tuesday Tip is...
 
Crockpot Cooking
 
One of my favorite "must haves" in the kitchen is my crockpot (I have three of them in various sizes). I can cook anything from a roast to a pot of meatballs to fun hot sandwiches. If I know we're having a particularly busy day ahead of us, I prepare the meal the evening before. When I wake up, I pull the pot from the refrigerator and pop it into the crock. I set it on low and it cooks all day. I don't only do this on days when I have to be out of the house but it works on those days when I know I have edits or I'm working on a writing deadline. There is nothing worse than having to STOP writing to make dinner.
 
Here's a simple and easy meal you can make tonight...
 
Buffalo Chicken Sandwiches
 
Boneless Chicken Breasts
1 packet ranch dip mix
1 bottle (12 oz) Lawry's  Buffalo BBQ Sauce
1 cup shredded Cheddar cheese
 
Place chicken in the crockpot. Mix powdered dip mix with the Buffalo BBQ sauce and pour over chicken. Cook on low for 5 hours. Take chicken out of crockpot and shred it. Return it back to crockpot and pour shredded Cheddar cheese over it. Let cheese melt before serving.
 
You can serve on hamburger rolls. My kids like to add some ranch salad dressing to offset the tangy sauce.
 
This is a great recipe for a party too.

    2. I love my crockpot. We had a wonderful roast yesterday. I don't envy you your husband's travel schedule. I think I'd go nuts. At least you have a great way of channeling all your lonely nights without him into something wonderful.

    3. I love putting roasts in the crockpot too, Tara. I'm used to the travel schedule. We've been married for 15 years and he's always traveled. But I do enjoy when he's home;)
