Holiday Recipes: Kate Richards's Irish Spaghetti Sauce

When I want real Italian spaghetti, this is not the recipe I make…but when I want something a little different, rich and thick and reminiscent of my childhood, this is what I do. In fact, we have it every New Year’s Day, just as my grandmother always did. In Brooklyn when my mom and aunt were growing up, each street had a different ethnicity. They were on the Irish street, but a street or two over, people didn’t boil everything to oblivion and they loved sneaking over to friend’s houses for a variety of taste treats. So, my grandmother invented her recipe, based on her daughter’s descriptions of a sauce she’d never tasted…and this is it!

Ingredients:
4 small cans Hunts
4  14 oz. cans Hunts tomato sauce
4 cans Campbell’s tomato soup
4 pounds ground beef
1 onion, diced
1 clove garlic…whole
1 teaspoon sugar
1/4 teaspoon baking soda

Brown ground beef and onion together, stirring until golden then add everything else and simmer all day over very low heat.

Be sure to scoop out the garlic clove at the end because nobody should accidentally bite into it. :) The baking soda is to prevent heartburn from all those wild ingredients.  For a family from Ireland, this truly was a culinary adventure, and even today we love it.
